Should I take out a $35k loan to buy a second truck or stay a one-truck operation?

ok so i've been running my truck solo for 6 years now, just me (37F) and my daughter (11F) at home, and business has actually been really good this year. a food hall downtown offered me a spot AND said i could bring a second rig if i wanted to double up on weekend festivals, but the loan would be $35k over 5 years and i'd have to hire and train a whole new crew i don't have yet. right now it's just me and my cousin's kid part time, i know every regular by name, i control every taco that goes out. if i do this i'm basically not cooking most shifts anymore, i'm managing people, doing payroll, praying they don't burn the carnitas. and if it flops i'm still on the hook for that loan whether the second truck makes money or not, that's real money that was supposed to be her school fund cushion. but if i don't do it i think about being 45 still standing at the same window every single night wondering what if. my tia says never bet the house on a maybe. my accountant says the numbers pencil out fine if i don't panic. i keep going back and forth like ten times a day, ay dios mio. genuinely don't know if this is smart growth or me risking everything we've built for a bigger headache 🌮
